Servo-Speed Control-Variable Pot

Hoping someone with a better background with servo controls can share some information Have used some ab, and some omron servo controls, but lately been looking at the servo line on automation direct web page. Looking for a simple servo, that you could mount a adjustable pot on a panel, then technicians adjust the pot to set the speed, and with the encoder feedback to the servo, the servo maintain the speed that has been set from the Pot. Any good recommendations? thanks
