Retrieving information over network from FA-M3

We have Nature Form incubators and hatchers that use FA-M3 controllers. We have installed SpecView to monitor them, but are not satisfeid with it. We'd like to write our own software to retrieve data from the FA-M3 and store and display as we like. I've sniffed the network and can see the data going back and forth, but I have no idea what it means, the protocol tha is being used. I've written a simple program to query the device, mimicing the data I got from the sniffer, but I just don't know what it means yet. Where can I get started on how to accomplish this? PS - as you can tell I'm quite a novice at all this, so any and all information, however basic it may seem, would be helpful.
