I've used Advantech Touchscreens with pretty good success. Also am currently using A-B VersaView touchscreen computers which is nice for a panel since it isn't much bigger than a regular touchscreen, but has the hard drive and everything else a normal PC has included.

You can hook directly to the ethernet port with a crossover cable connected to your laptop and use BOOTP, driver should be Ethernet I/P. Or you can use the RS232 connection and use the RS232-DF1 driver with null modem cable and hit Auto configure.

Fireye makes some good flame monitoring systems. Most will give you codes for a display for reason of failure and readings of 'flame signal strenth' so you can tell if the 'fireye' is beginning to fail, is dirty or aimed improperly. http://www.fireye.com
